Secrets of a great roast revealed

Picture credit: @pots_pans_and_pancakes .Want to know what takes ordinary roast chicken to taste like degh roast chicken? I believe the secret is in the METHOD.

This was the roast I made for Eid breakfast last week Monday. 
Below are my top tips for great roast: 
1) Roast large cinnamon sticks, cardamom pods (crack them first to emit the flavours while cooking) and whole cumin in the pot without any oil. (This revitalizes the spices and gives of a greater aroma in the food.) 2) Add oil and fat to the pan before cooking the onions. Having a mixture of seeded oil and fat (clarified butter or coconut oil) gives the onions a different taste.

3)Once the onions are browning do not add the meat (which was marinating overnight). Rather add the access marinade in the pot fist and braise it. This brings out the taste in the masala.

4)Have you hear the term “Seal the meat?” This is when you cook the meat at high temperature for a short time to prevent it from losing moisture. This is exactly what you will do with the meat. Cook it on high to seal it on both sides.

5)Thereafter add water with access marinate slowly into the pot. To perfect this dish you have to treat it very carefully. Less mixing so there is less breaking of the meat. Slow cooking and gradually add water. Cook on low till the onions are incorporated into the gravy leaving your with a delicious tender roast chicken with aromatic gravy ready to mop up with milk loaf of fresh naan. 
End of with FRESH chopped coriander to garnish.

Spicy Pan Fried Kingklip With Parsley Sauce 
@tasneemxpatel 
Ingredients (1/2 kg fish)
1 teaspoon paprika
1 teaspoon salt
1 teaspoon garlic powder
1 teaspoon black pepper
1 teaspoon rough red chillies
1 teaspoon cayenne pepper
1 teaspoon dried oregano
2 tablespoon lemon juice 
1 teaspoon fresh thyme
.1 tablespoon flour 
3 tablespoon butter
1 cup milk 
1/4 cup finely chopped parsley
1 teaspoon mustard powder
1/2 teaspoon white pepper 
Method 
Step 1
Mix ingredients from paparika up untill thyme and rub onto both sides of fish.
Leave to rest in fridge for 30 minuets
Step 2.
In a large saute pan, heat  2 tablespoon butter. Add the fish to the saute pan, pan-frying for about 4 minutes on each 
Step 3
Take a saucepan 1 tablespoon melt butter, mustard powder add flour and whisk. Add 1 cup milk white pepper, oregano, parsley and whisk till slightly thick.
Step 4
Once fish cooked throw half the sauce over the fish serving the other half of the sauce on the side.

Brochetas de pavo al horno

Ni les explico el aroma de esta preparación, porque además de ser fácil y saludable, es alta en impacto en lo que aliños de refiere, y cómo no, si la calidad se nota a la hora de comer. Como siempre mi aceite de oliva @kardamilichile y los condimentos todos @gourmetchile. Aquí va!

1) cortar en cuadritos 800 gr de pavo (puede ser pechuga o truto deshuesado), 1/2 zapallito italiano y tomates cherry enteros.
2) montar todos los ingredientes en brochetas y luego aliñar con aceite de oliva @kardamilichile extra virgen, mix de pimientas, sal de mar (yo usé la de perejil y ajo), merken y orégano.  No sean tímidos con el merken, es lo mejor!
3) llevar a horno pre calentado a 200°c por 15 a 20 min. Servir con guacamole para picoteo o como guarnición para arroz, quinoa, papas o ensaladas. Añadí un toque de cilantro picado y limón al momento de comer.

SCHNELLES DINKEL-VOLLKORNBROT MIT BUCHWEIZEN!

Die Zubereitung dieses Brotes dauert maximal 10min und braucht auch keine Gehzeit! Probiert es unbedingt mal aus, es lohnt sich auf jeden Fall. REZEPT
- 300g Dinkelvollkornmehl
- 200g Buchweizenmehl (Buchweizen im Mixer gemahlen, alternativ mehr Dinkelvollornmehl)
- 50g Leinsamen ganz
- 50g Sonnenblumenkerne
- 50g Kürbiskerne
- 500ml wasser
- 1 Würfel Hefe
- 2 El Apfelessig
- 2 Tl Salz
- optional: 1 Tl Kümmel  1 Tl Koriander gemahlen -> Den Buchweizen in einem Mixer zu Mehl vermixen und mit allen anderen Zutaten in der genannten Reihenfolge mischen und mit einem Knethaken zu einem Teig mixen. In eine mit backpapier ausgelegte Kastenform füllen und im KALTEN Ofen bei 200 Grad Ober/UNter Hitze für eine Stunde backen.

Been craving some soup so that's what I did, made soup. It doesn't look the most appetizing but it tastes great! I also have 8oz of orange juice(110 cals) every day on top of this for a total of 1610 calories per day. 
Ingredients:
4lbs 93% lean ground beef
1lb bacon
5lbs potatoes
3lbs broccoli
1lb red onions
1lb celery
3 scoops pea protein
20 egg whites
One 7oz block of cheddar cheese 
Salt, paprika, garlic powder for spices

Marc's Powerhouse Soup

Wash and cut the potatoes, put em all in a big pot, cover with water and bring to a boil. Fry up the bacon and drain the fat(blasphemy, I know. Don't want the extra cals though). Dice up the celery and onion and dump it in the pot with the potatoes. Cook up all the beef and throw it in the pot along with the bacon as well. Finally, put the pea protein in the pot just to get some extra protein in and not much of the other macros. Put the egg whites in the bowl before you pour your soup in for the egg drop. Some people find it gross, but I love it personally. Super easy to make and feels like you're eating a lot for a small amount of calories. This makes about 3 large bowls per day for 5 days.

Кольраби со сливочным соусом
Ингредиенты

3–4 небольших кольраби;
5 веточек зелени;
соль — по вкусу;
4 столовые ложки сливочного масла;
2 столовые ложки муки;
570 мл сливок;
1 щепотка молотого мускатного ореха.
Приготовление
Кольраби нарежьте небольшими кусочками. Зелень нарубите.

Закиньте капусту в кипящую подсоленную воду и варите 10–12 минут или дольше. Кольраби должна стать мягкой, но не разваливаться. Откиньте на дуршлаг, после переложите в тарелку.

В сковороде растопите масло на среднем огне. Засыпьте муку и обжаривайте около 3 минут. Постоянно помешивая, влейте сливки. Убавьте огонь и варите до загустения примерно 10 минут.

Полейте кольраби соусом, посыпьте зеленью и мускатным орехом.

Na termix se mi často ptáte a je to prostě jenom moje pojmenování, když smíchám jogurt (sójový nebo normální) s proteinem - tady jsem použila jahodový a ještě jsem v něm rozmačkala trochu jahod.⁠

Crab Apples

A super healthy Sprouted Mung Bean Chilli. The sodium levels are high but keep in mind that this is the total for the entire recipe - rather than a portion.

Stage 1:
2 onions (diced)
3 cloves of extra large garlic (finely minced)
1 tablespoon of rice bran oil (use your oil of choice) 
Stage 2:
One large carrot (diced)
2 stalks of celery (diced)
1 green bell pepper (diced)
Stage 3
454g bag of veggie mince
Stage 4
70g of sun-dried tomatoes (diced)
400g tin of chopped tomatoes
400g carton of tomato and basil passata
1 OXO vegetable cube
1 pint of water
Stage 5 (SPICES - adjust as you like)
One teaspoon of iodized salt
2 teaspoons of dried oregano
Half a teaspoon of turmeric powder
One teaspoon of cumin powder
One teaspoon of smoked paprika
Half a teaspoon of cayenne pepper
Two fresh bay leaves (from our garden)
Two sprigs of fresh rosemary (from our garden)
2 tablespoons of Sainsbury's gravy granules for meat (which are surprisingly vegan!) Stage 6
400 g of sprouted mung beans (sprouted for two days)
90 grams of vitamin D enriched mushrooms
85g of curly kale

Stage 1 - put all stage 1 ingredients into a pan on medium heat and fry for about 5 minutes until softened.

Stage 2 - add stage 2 ingredients to the pan and continue to cook for a further 4 or 5 minutes until the carrots start to soften down.

Stage 3 - add the veggie mince and stir in with all of the vegetables. Allowed to cook for 2 or 3 minutes.

Stage 4 - throw all of the stage four ingredients into the pan and allowed to come to a simmer.

Stage 5 - add all of your herbs and spices from stage 5 ingredients into the pan. Adjust as necessary. We have a lot of herbs and spices in our cupboards so we have a lot of these lying around. Cook for about 20 to 25 minutes.

Stage 6 - add the remaining ingredients from stage 6 and cook for about 5 minutes to wilt the kale. If you cook much longer than this you could destroy the nutrient profile of the sprouts.

Stage 7 - served with a side of your choice. We had ours with mixed quinoa and some avocado although neither of these have been included in the nutrient breakdown.

“PF CHANGS” CHICKEN LETTUCE WRAP MEAL PREP🥬🥢
This recipe is so healthy, quick, and delicious. I have been looking forward to eating my lunches all week!! All you need (4 servings):
1 lb. ground chicken
2 tbsp. olive oil
1 can garbanzo beans (chickpeas)
1/2 yellow onion, chopped
1 head of butter lettuce
Low sodium soy sauce
Garlic powder
Directions:
In a large skillet, add oil and cook chicken. 
Once cooked, add garbanzo beans and onions. 
Stir in soy sauce and garlic powder to taste and let simmer. 🧂
Create your meals! I put two lettuce leaves in each container and divided the chicken up evenly. Feel free to add spices or sauces that fit your taste!! These will definitely defeat the boring lunch battle

Rucola, gegrillter Pfirsich, Brombeeren, Pistazien, Mozzarella und Agavendicksaft-Senf-Dressing - ungewöhnliche Kombination, aber sehr lecker und harmonisch.  Fruchtig, bitter und scharf. So sollte auch ein gutes Olivenöl schmecken.  Die Bitterstoffe kommen übrigens von den Polyphenolen = Antioxidantien, von denen im Bertolli Olivenöl ja durch die frühe Ernte besonders viel enthalten ist.  Habt ihr schon mal euer Olivenöl pur verkostet? Testet es einfach mal selber. 
Rezept Dressing:
4 EL Bertolli Natives Olivenöl Original
4 EL Essig (Äpfel oder Weißwein)
2 EL Agavendicksaft (oder Honig)
1 TL grob gemahlene Senfkörner
1/2 TL scharfer Senf
Salz & Pfeffer
Alles in ein verschließbares Glas füllen und gut schütteln bis sich alles verbunden hat. Direkt vorm Servieren über den Salat geben. Reicht für eine große Schüssel Salat.
Die Pfirsiche einfach in einer Grillpfanne ein paar Minuten anbraten, bis sie leicht karamellisieren.

1. Masukkan tiga butir telur ke dalam satu wadah.
2. Tambahkan garam dan penyedap rasa ke dalam telur. Kocok telur dengan menggunakan telur hingga tercampur rata. 
3. Panaskan minyak di atas teflon 
4. Tuangkan telur scrap dengan menggunakan sumpit dan geser-geser ke arah depan.

Pogača David iliti pogača koja je dobila ime po mom  srednjem detetu, mlađem sinu.  Juče je bi poseban dan, mada je svaki dan sa mojom decom poseban ali su neki za nijansu posebniji. Znam da će on sad ovo pročitati i pitaće me što sam dala pogači njegovo ime (mada zna razlog), što sam ga uopšte spominjala, kao smeta mu, a znam da voli… mangupska posla

Potrebno:

250 ml mleka 
45 g kvasca 
1 i po kašičica soli 
1 kašičica šećera 
750 g brašna 
100 g kisele pavlake 20 %mm 
70 g putera 
50 ml ulja 
2 jajeta 
susam, lan, čurekot 
U mlako mleko dodajte kvasac, šećer i kašičicu brašna. Ostavite 10 minuta da kvasac nadođe.

Dodajte ulje, malo umućena belanca, jedno žumance i so. Promešajte pa brašnom zamesite testo. Ostavite 30 minuta da testo naraste.

Nakon tog vremena od testa uzmite 100 g i ostavite na strau. Ostatak testa podelite na 6 jednakih delova.

Svaki deo posebno razvucite u krug. Prvi krug stavite na papir za pečenje koji ste isekli u prečniku 28 cm. Premažite  puterom, a onda preko složite drugi krug i ponovite postupak premazivanja, kao i sve preostale do poslednjeg šestog dela koji ne premazujete.

Postupak zasecanja i pravljenja imate u videu (youtube i sajt). Pogaču prebacite, zajedno sa papirom u tepsiju veličine 28 cm i nastavite sa uvijanjem. Premažite jajetom i pospite susamo, lanom i semenom čurekota.

Pecite u zagrejanoj rerni na 190 °C  oko 35 minuta ili zavisno od vaše rerne.

Tomatillos Avocado Salsa Fresca

5 tomatillos, quartered 
1 large avocado
4-5 fresh garlic cloves, whole
1/2 to 1 whole jalapeno
Juice of one large lime
1/2 white onion, finely copped 
1 bunch cilantro, finely chopped 
1/4 water
Salt to taste

1. Blend together tomatillos, avocado, garlic cloves, jalapeno, water until smooth. Pour into a large mixing bowl. 
2. Mix in finely chopped cilantro and white onion. 
3. Add salt to taste. Add more water if needed, salsa should be on the thinner side. 
Use on tacos, eggs, nachos, steak, chicken, sandwiches, or eat by the spoonful .

On connaissait les légumes oubliés... Moi j'innove avec les photos oubliées ... Non mais sérieux!! En parcourant mes photos j'suis tombée sur plein de clichés que je n'ai jamais publiés... A croire que j'avais vraiment rien à foutre de mes week-ends cet hiver et tellement d'inspiration que je faisais 3 milliards de choses que je n'avais même pas assez de temps pour tout publier...

Ça vous arrive à vous de redécouvrir des trucs et vous dire: ah mais ouiiii c'est vrai que j'ai fait ça un jour!?
.
Et c'était bon en plus j'ai remplacé le citron par de l'orange, alors la texture n'est pas la même qu'avec le citron mais c'était super bon, frais et léger. .
RECETTE
.
•12 cl de jus d'orange.
•2 oeufs + 1 jaune
•50gr ou 100gr de sucre (selon le sucre des oranges).
•200gr de beurre pommade.
•Le zeste d'une orange.
~~~~~~~~~~~~
•Mélanger sucre+ zeste et laisser reposer 10mn.
•Ajouter jus + oeuf et la moitié du beurre.
•Fouetter sans cesser au bain marie, jusqu'à épaississement.
•Laisser refroidir à 35°c puis ajouter le restant de beurre en mixant (sans incorporer d'air) au mixeur plongeant par exemple.
•Vous pouvez garnir une tarte au fruit, des choux, napper des biscuits ou même la manger comme ça...
